Hummus is probably one of the favorite appetizers or snacks to prepare. It's also nutritious and simple.
As we all know, hummus is usually made using chickpeas. For this particular hummus, we’re using cashews as the base! This rich and creamy Cashew hummus is healthy fat packed.
The ingredients list are quite similar to the traditional hummus recipe. To make the cashews soft and usable, soak them overnight or for at least 4 hours.

Cashew Hummus Recipe:
Serves: 5-6 persons
Prep Time: 10 min.
Ingredients:
500g Cashews (not soaked)
2 cloves of Garlic
2 tablespoon Tahini
5 tablespoon Olive oil
Juice from 1/2 Lemon
1 teaspoon ground Cumin
Salt and Pepper
Fresh dill
Instructions:
Place all cashews in a bowl. Fill with water until the cashews are just covered. Let soak for at least 4 hours so that the cashews are soft.
In a food processor or blender, combine drained cashews. To make the sauce, just combine all of the ingredients in a food processor and process until smooth and creamy. If the hummus is too thick and grainy, add extra olive oil or water. It's not supposed to be dry.
Blend for a few minutes, until the mixture is smooth and creamy. Taste and adjust the seasonings if necessary. Remember to add a pinch of salt flakes.
Drizzle oil over the cashew hummus and season with salt, pepper, and fresh dill. You can store the hummus in a clean airtight container in the fridge for 4-5 days.
